More Benefits of Lycopene

We have previously mentioned some of the great benefits of Lycopene. Lycopene has outstanding nutrition benefits and can even help you look younger due to its anti-aging substances. Lycopene is so easy to add to your diet. Here is a great recipe that is simple, fast and your family is sure to love:

Perfect Penne
(serves 4)

2 Cups Cooked Hot Penne Pasta
4 Chicken Sausage Links
4 Medium Tomatoes Chopped
4 Tbl. Chopped FreshBasil
2 Tbl. Balsamic Vinegar
3 Tbl. Extra Virgin Olive Oil
1/2 Cup Shaved Parmesan Cheese

Slice the sausage links and cook in a non-stick skillet until done over medium high heat . Add the chopped tomatoes and heat through 1-2 min.. Add the Penne and basil. Drizzle with the balsamic and extra virgin olive oil. Serve on individual plates and sprinkle the Parmesan on top.

For variation try a Chicken artichoke or Chicken apple sausage. There are so many great flavors to choose from. How about a whole wheat Penne for added fiber? And did you know that many store like Trader Joe's carries High Lycopene Tomatoes?
